Boondi


 Preparation Time : 10 to 20 minutes

Cook Time : 15  to  30 minutes 

Total Time : 25  to 50 minutes 


Notes 📝

You can use Red , Yellow and Green food colouring(optional).

You have to wisk the batter at least for a 5 minutes untill it smooth(no lumps ).

Skimmer Spoon - Big round spoon with small holes.




Ingredients  

For the batter 

  • Chickpea Flour(Besan Flour / Gram Flour)- 250g
  • Water - 1 cup + 2 table spoon 
  • Oil - 2 table spoon 
  • Food Colouring (optional)
  • Pinch of Salt 

For the Syrup 

  • White Sugar - 500 g
  • Water - 250 ml 
  • Vanilla extract - two tea spoon
  • Ghee - 2 table spoon 
  • Lime/Lemon - 1/2  




Method 

Add Gram flour to a bowl then add Salt , Oil and Water.
Mix all together until Smooth or medium thick.
(Flowing Consistency) 


Cover and allow to rest at room temperature.
( 15 to 30 minutes)
Split the batter for number of  food colouring you will use. 
(e.g .food colouring - red , green and yellow ,
 you will spilt the Batter in to three)


 For the Syrup 

Add 2 cups of sugar and water (250 ml ) in to a pan.Stir it on a medium flame.
Then add Vanilla extract , Ghee and lime/lemon juice.
Stir it untill the sugar dissolve.(no string consistency)
 



Heat oil/ Ghee in a pan for deep frying once the oil is hot 
use  the Skimmer Spoon.
(3 to 4 cm above the oil or the pan ) 


Now add two table spoon of batter and let it fall.
(do not spread ) 


Stir them with a different ladle and fry over medium flame
(30 to 40 seconds ) 


Repeat the process for the remaining batter .
(Wash and wipe the skimmer spoon each time before adding the batter) 

Now mix the boondi and the sugar syruo together.
(heat the sugar syrup slightly if it is not warm )


Soak the Boondi for 1 - 3 hours or overnight .
(boondi will absorb the sugar syrup )
